Rice pasta, tomatoes, peanuts and cricket powder

Rice pasta with tomatoes, peanuts, cricket powder - Ingredients:

  • 340g rice vermicelli
  • 500g cherry tomatoes
  • 200g roasted and salted peanuts
  • 20 cl of coconut milk
  • 4 tbsp. peanut butter
  • 2 tbsp of olive oil
  • 2 onions
  • 2 cloves garlic
  • 6 sprigs of basil + some leaves in decoration
  • 6 sprigs of mint
  • Salt pepper

For a extra protein boost : 1 tbsp. of Inpulse organic cricket powder per person

Cut the tomatoes into two. Take the mint leaves and basil and chop them coarsely Peel onions, peel and chop garlic and chop finely. Heat the oil in a large pan and fry the onion and garlic for 3 to 4 minutes over high heat.

Add coconut milk and peanut butter, mix well and keep warm. Cook the vermicelli for 3 minutes in a pan of boiling salted water, then drain and pour into the pan.

Add the tomatoes, salt, pepper and bring to a boil for 1 to 2 minutes, stirring gently. Add the peanuts, decorate with a little basil and enjoy !
